Ingredients

  • 4 CS. TURKEY PATTIES
  • 2CS WHOLE WHEAT BUNS
  • 6 CS CANNED PEAS
  • 7 CANS PINEAPPLE

Instructions

  1. PLACE PINEAPPLE IN 2QT CONTAINERS, BASED ON PORTION CHARTS FOR CLASS SIZES
  2. PLACE PEAS IN PAN ACCORDING TO THE PORTION CHARTS FOR CLASS SIZES. ADD 1/2IN OF WATER TO EACH PAN, AND SEASON WITH SALT AND PEPPER TO TASTE. WRAP ALL PANS IN FOIL AND LABEL WITH CLASSNAME/FOOD NAME. HEAT 1T 350 DEGREES UNTIL THEY REACH AN INTERNAL TEMPERATURE OF 160 F, ABOUT 15 MINS
  3. BAKE TURKEY PATTIES AT 350 DEGREES FOR APPROX. 18 MINUTES OR UNTIL THEY REACH AN INTERNAL TEMPERATURE OF 160 DEGREES
  4. CUT TURKEY PATTIES INTO 1/4IN DICE FOR THE DUCKS, ALL OTHER PATTIES SHOULD BE CUT IN HALF. EACH CHILD RECEIVES 1/2 A PATTY REGARDLESS OF AGE.
  5. CUT BUNS INTO ACCURATE SIZES AS NEEDED, AND ENSURE ALL CHILDREN RECEIVE ONE BUN PER HALF A TURKEY PATTY

PEAS SHOULD BE PANNED UP THE NIGHT BEFORE AT THE LATEST

BUNS SHOULD BE PORTIONED, WRAPPED IN FOIL, LABELED WITH PRODUCT/CLASS NAME, AND PLACED IN THE REFRIGERATOR AS MUCH AS 3 DAYS IN ADVANCE.
