TOMATO BASIL FLATBREAD W/ CHEESE, CORN, AND STRAWBERRIES

  • 2 CS. OVAL FLAT BREAD
  • 2 CN. MARINARA
  • 2 BAGS MOZZARELLA
  • 1 CS. CORN
  • 4 CS STRAWBERRIES

Instructions

ASSEMBLE FLAT BREADS ON SHEET TRAYS LINED WITH PARCHMENT PAPER.  SPREAD SAUCE ON FLATBREADS, THEN TOP WITH CHEESE. BAKE AT 350 F. FOR 8-10 MIN.  CUT INTO SIX SLICES EACH.

PLACE CORN INTO METAL HOTEL PANS ACCORDING TO CLASS SIZE AND AGE.  FILL PANS WITH 1/2IN OF WATER, AND SEASON WITH SALT AND PEPPER.  WRAP IN FOIL, AND LABEL WITH CLASSROOM NAME.  HEAT AT 35OF FOR 20 MINUTES ORUNTIL REACHES AN INTERNAL TEMPERATURE OF 160F.

USING HAND HELD SLAP CHOP TOOL, SLICE STRAWBERRIES. PORTION INTO 2QT PLASTIC CONTAINERS ACCORDING TO THE PORTION CHART BASED ON CLASS SIZE AND AGE.
