Pumpkin Chocolate Chip Muffins

Ingredients

  • 5 C. WHOLE WHEAT FLOUR
  • 25 C. AP FLOUR
  • 3 TBS BAKING SODA
  • 4 TBS. SALT
  • 10 C. SUGAR
  • 1 CAN PUMPKIN PUREE
  • 4 C. CHOCOLATE CHIPS
  • 2 C. OIL
  • 4 TBS. VANILLA
  • 20 C. SOY MILK/WATER

Instructions

BLEND PUMPKIN PUREE INTO WET INGREDIENTS. ADDDRY INGREDIENTS AND MIX UNTIL JUST INCORPORATED. 

DIVIDE BATTER ONTO 3 SHEET PANS THAT ARE PARCHMENT LINED AND SPRAYED. 

BAKE AT 350 F. FOR 25-30MINS. OR UNTIL DONE.

CAN BE MADE UP TO 3 DAYS AHEAD. WRAPPED IN PLASTIC AND STORED AT ROOM TEMPERATURE.
