Pumpkin Chocolate Chip Muffins
Ingredients
- 5 C. WHOLE WHEAT FLOUR
- 25 C. AP FLOUR
- 3 TBS BAKING SODA
- 4 TBS. SALT
- 10 C. SUGAR
- 1 CAN PUMPKIN PUREE
- 4 C. CHOCOLATE CHIPS
- 2 C. OIL
- 4 TBS. VANILLA
- 20 C. SOY MILK/WATER
Instructions
BLEND PUMPKIN PUREE INTO WET INGREDIENTS. ADDDRY INGREDIENTS AND MIX UNTIL JUST INCORPORATED.
DIVIDE BATTER ONTO 3 SHEET PANS THAT ARE PARCHMENT LINED AND SPRAYED.
BAKE AT 350 F. FOR 25-30MINS. OR UNTIL DONE.

CAN BE MADE UP TO 3 DAYS AHEAD. WRAPPED IN PLASTIC AND STORED AT ROOM TEMPERATURE.
