Chocolate Chip Zucchini Bread

Ingredients

  • 25 C. AP FLOUR
  • 5 C. WHOLE WHEAT FLOUR
  • 3 TBS. BAKING SODA
  • 6 TBS. CINNAMON
  • 4 TBS. SALT
  • 10 C. SUGAR
  • 3 C. OIL
  • 6 T. CINNAMON
  • 6 TBS. VANILLA
  • 16 C. SOY MILK OR WATER
  • 1 BAG BLENDED FROZEN ZUCCHINI AND OR 8 C. CHOCOLATE CHIPS

Instructions

BLEND ZUCCHINNI WITH WET INGREDIENTS.

ADD DRY INGREDIENTS, AND MIX UNTIL JUST INCORPORATED. 

DIVIDE BATTER ONTO 2 ½ PARCHMENT LINED AND PAN SPRAYED SHEET PANS.  BAKE AT 350F FOR 25-30 MIN OR UNTIL DONE.

CUT TRAYS 11X7 INTO 77 SQUARE PIECES.
