Chocolate Chip Chickpea Bars

Ingredients

  • 25 CUPS AP FLOUR
  • 5 CUPS WHOLE WHEAT FLOUR
  • 3 TBSP BAKING SODA
  • 2 TBSP BAKING POWDER
  • 15 CUPS SUGAR
  • 10 CUPS CHOCOLATE CHIPS
  • 3 CUPS VEGETABLE OIL
  • 4 TBSP VANILLA EXTRACT
  • 12 CUPS SOY MILK
  • 1 TBSP SALT
  • 1 CAN PUREED CHICKPEAS

Instructions

  1. DRAIN WATER FROM CHICKPEA CAN, IT'S OKAY IF THERE IS SOME LEFTOVER
  2. COMBINE CHICKPEAS WITH WET INGREDIENTS AND BLEND UNTIL SMOOTH.
  3. ADD DRY INGREDIENTS AND MIX UNTIL INCORPORATED. MAKE SURE THERE ARE NO HARD BITS OF UNMIXED FLOUR.
  4. LINE 3 SHEET TRAYS WITH PARCHMENT PAPER AND SPRAY WITH NON STICK PAN SPRAY
  5. EVENLY DISTRIBUTE THE MIXTURE ONTO THE SHEET TRAYS
  6. BAKE AT 350F FOR 15 MINUTES. ROTATE THE TRAY FOR EVEN COOKING.
  7. BAKE AT 350F FOR AN ADDITIONAL 10-15 MINUTES UNTIL BARS ARE COMPLETELY COOKED.
