Chili Mac and Cheese with Mixed Vegetables and Oranges
Ingredients
- 20# Cavatappi Pasta
- 1 cs Ground Turkey
- 1 cs Manwich
- 1 bag Cheddar Cheese
- 1 cs Mixed Vegetables
- 8 cans Oranges
Instructions
Mix cooked pasta, cooked turkey, 3 cans of Manwich sauce, and 5# of shredded Cheddar cheese divided amongst 2 plastic bus tubs.
Portion combined pasta into metal 3rd pans according to the portion charts for the class size and age. Cook in oven until it reaches an internal temperature of 160 F
Place veggies in metal hotel pans, according to the portion chart based on class size and age. Add a 1/2 inch of water to all the pans. Season with salt and pepper to taste. Bake/Steam at 350 F for 20 minutes
Open 7 cans of oranges and empty into a strainer placed in the prep sink. Portion the oranges into 2qt plastic containers according to the portion chart based on age and class size. Cover w/ lid, and label with the classroom name/item name.
Notes
Pasta, turkey, fruit, and vegetables can all be prepped up to 3 days in advance. Highly, recommended to have the pasta and turkey cooked no later than the day before the recipe is needed.
