Blueberry Lemon Muffin

Ingredients

  • 5 C. WHOLE WHEAT FLOUR
  • 25 C. APFLOUR
  • 2 TBS. BAKING SODA
  • 6 TBS. BAKING POWDER
  • 2 TBS. SALT
  • 3 TBS.CINNAMON
  • 9 C. SUGAR
  • 8- HALF-PINTS BLUEBERRIES
  • 2 TBS. VANILLA
  • 2 C. OIL
  • 20 C. WATER/SOY MILK
  • 1 QT LEMON JUICE

Instructions

IN A LARGE PLASTIC BUS TUB, COMBINE ALL INGREDIENTS AND WHISK TOGETHER UNTIL ALL INGREDIENTS ARE MIXED THOROUGHLY AND EVENLY COMBINED.

DIVIDE BATTER ONTO 3 ½SHEET PANS LINED WITH PARCHMENT AND PAN SPRAYED. 

BAKE AT 350 F. FOR 25-30MINS OR UNTIL DONE.
