  • 1 CS. MARINARA
  • 1 CAN PUMPKIN PUREE
  • 1 CS. MIXED VEGETABLES
  • 8 CANS MANDARIN ORANGES

Instructions

BLEND ONE CAN OF PUMPKIN PUREE INTO 3 CANS OF MARINARA SAUCE.

TO ASSEMBLE: LADLE 20oz OF SAUCE INTO THE BOTTOM OF EACH METAL 1/3RD PAN. ADD RAVIOLI TO THE PANS BASED ON CLASS SIZE. TOP WITH ANOTHER 20oz OF SAUCE.

WRAP WITH FOIL, LABEL WITH CLASSROOM NAME, AND BAKE UNTIL 160 F IN OVEN AT 350 F. 20-25 MIN.

PORTION MIXED VEGETABLES INTO HOTEL PANS BASED ON PORTION CHARTS FOR CLASS SIZE.  ADD 4oz OF WATER TO EACH HOTEL PAN. SEASON WITH ONE TEASPOON SALT, MIX TO INCORPORATE.

OPEN 8 CANS OF ORANGES, AND STRAIN ALL THE LIQUID FROM THE CANS. IN 2QT PLASTIC CONTAINERS, PORTION ORANGES ACCORDING TO THE PORTION CHART BASED ON CLASS SIZE.
